A Lazy Girl's Guide to Baking | Easy Gooey Chocolate Brownie Recipe

For the last few months, we've been living with my in-laws between leaving our rented flat and waiting for our house to be finished. So all my stuff is in storage, with just a few boxes/suitcases to live out of until we finally complete in November. Without access to my two huge cupboards full of baking apparatus, ingredients and unlimited access to the kitchen without the worry of making a mess in someone else's house, I've been very limited to the number of cakes and yummy snacks I can make. So how so I go about satisfying my sweet tooth without messing up the kitchen or being in there too long? Keep reading to find out!

My fortnightly bake has turned into only baking once in three months, which for someone like me, who loves making cakes and cookies, is like not being allowed to watch your favourite TV show. A little dramatic I know, but I really do miss making cakes! There's so much more satisfaction in eating something delicious when you know you've made it yourself.  Without this access to my cake supplies, I've turned to 'lazy' baking, looking up various microwave recipes* in order to keep my sweet tooth happy and keep my time and mess in the kitchen to a minimum.


One of the easiest ways (and cleanest!) to bake cakes and brownies is by using a microwave... yep, you've read that correctly! It's so easy to do and I've often even made these things at work by just taking the few ingredients in with me; there's nothing better than a 3pm cup of tea and a mug cake!

My favourite microwave recipe is for Gooey Chocolate Brownies, in a mug. Why wait 45 minutes for something to be baked and cooled, when you can make a delicious, indulgent brownie in just 3 minutes? This recipe is more than enough for 2 people, or just one hefty portion if you're feeling a bit piggy!


Gooey Chocolate Brownie Mug Cake Recipe

Ingredients:

  • 4 tbsp Plain Flour
  • 4 tbsp Light Brown Sugar
  • 2 tbsp Butter, Melted
  • 1 large Egg
  • 2 tbsp Cocoa Powder
  • 1/2 tsp Coffee Powder
  • 1/4 tsp Baking Powder
  • Pinch of Salt
  • 3 tbsp Milk
  • 1 tbsp Vegetable or Coconut oil, melted
  • 1 tsp Vanilla Extract
  • 3 tbsp Chocolate Chips
  • *Optional: 1-2 tbsp Peanut Butter and Caramel Sauce, warmed
  • 1 tbsp Additional Chocolate Chips
  1. Easy 8 Step Method:

  2. - Spray a large mug with cooking spray/ grease with Butter.
  3. - In a bowl whisk together the Brown Sugar and melted butter.
  4. - Whisk in the Egg, Milk, Oil and Extract until smooth and well combined.
  5. - Add in the Flour, Baking Powder, Cocoa Powder, Salt and Coffee Powder.
  6. - Whisk just until combined (take care not to over whisk).
  7. - Fold in the 3 tbsp of Chocolate Chips.
  8. - Pour this mixture into the mug (or mugs if you plan on sharing ;) ).
  9. - Microwave on high for 1 minute and 30 seconds. This can vary on microwave, so keep adding 10 seconds until it's well-puffed and still slightly moist. Max cooking time should be 3 minutes. The cake might look like it is overflowing from mug, but it will settle.
When you pull it out of the microwave, the brownie should be fluffy and gooey. You can then add those additional chocolate chips and peanut butter and caramel sauce, which will melt further with the heat off the brownie, leaving a decadent gooey brownie for you to indulge your tastebuds.
